- Enchiladas Verdes : Delicious green enchiladas made with tomatillos, lime, and plenty of cilantro. Whether they are spicy or mild, the sauce is flavorful and well worth the time to make.
- Tortilla de Patatas : A beautiful rotund omelet made with potatoes, onion, and other choice ingredients. The most typical Spanish dish; made in every Spanish household. More classic than Paella for sure. Javier loves to say, "You have not been to Spain if you did not eat tortilla, and if you eat tortilla you might as well have visited Spain."
- Paella Valenciana : Very well known world-wide, but seldom made well. A very thorough look at how to make this sophisticated rice dish.
- Croquetas : Not to be confused with French or Italian croquettes. These fried delicacies are filled with creamy bechamel and other rich fillings. Forget the potato; bechamel is divine.
- Gazpacho : Many people do not like gazpacho, but they usually have not had real gazpacho. Remember - if it resembles Mexican salsa, it is not gazpacho. Gazpacho is creamy and smooth. A beautiful accompaniment to a tortilla de patatas and a sunny day.
- Arancini : A rare treat in our house. These delicious fried and stuffed rice balls are one of my favorite dishes to show off. There are few dishes as impressive as these Sicilian delicacies.
- Bürek and Zeljanica with a side of Tarator : A taste of Bosnia and the Ottoman Empire. We fell in love with these savory pies while touring the Balkans. It took questioning of many people we met in Bosnia to get a good idea of how to make these pies. Make them for a party, or eat a pie all to yourself!
- Túró Rudi: Delicious little deserts! Chocolate covered cottage cheese and cream cheese. Slightly sweet and wonderful as a post meal treat.
- Weinachts Guetzli - Swiss Christmas Cookies : Javier's family cookie recipes. Each year we make five or six different types of these cookies. Tins upon tins of sweet, nutty, and citrus flavored cookies. These are perfect for giving out as gifts.
- Raclette : A simple dish to prepare. Just boil potatoes, cook the bratwurst, and melt the cheese. The main factor that makes this complicated is melting the cheese. Best if you have a raclette grill or small portable stove.
- Gumbo : A thick and hearty stew with chicken, sausage, shrimp, and wonderful okra. A taste of the southern U.S.
